Betty Crocker At Work

I have made my carmel corn (and some I even formed into balls, stuck popsickle sticks into them and dubbed them "popcorn ball pops"), and I have two pecan pies in the oven. All for the bake sale. I found a cute idea for some candy pops I may kick out yet today - if I do, I'll take some pics and show you before I run the food into town for the sale.
While the pies bake, I wanted to tell you the reason I'm baking the pies. It all ties into my journalling. I do this ritual when I'm running toward the end of any given journal. I review the first few days of writing from that journal and meditate on who I was when I wrote that, and how I've changed since then. The journal I'm currently finishing up was one I started last April - Good Friday, as a matter of fact. The second journal entry is the Monday after Easter, and I wrote about how I had my parents over for Easter dinner and how I made this Easter feast - ham and potatoes and fruit salad and cheesy potatoes. My mom brought a veggie tray and rolls. The weather was beautiful and my mom and I walked our little dogs through the park and my dad and my husband had a good time reviewing the remodeling project my husband was up to in the basement. My dad is diabetic, but gave up his dietary restrictions for the day - so, I made his favorite pie - which he hadn't had in years - pecan pie. When I read the journal entry I remembered my dad raved about that pie for months afterward. His blood sugar went through the roof afterward, and my mom had to drive home, so he never had it since, but he still raved about the pie. He loved it. The day ended with my parents leaving, and my family taking a walk at a nearby park and having a beautiful evening together. I had written that it was one of those rare perfect days. I even wrote it was "a taste of heaven on earth." Ironic, since that was the last big holiday I would have with my dad before he went to heaven. And, I'm so glad I made him that darn pecan pie. I am SO GLAD!
So, I am going to put some shortened version of this story on each of the pies I am selling at the bake sale. It was such an honor to make them this morning - they definitely were made with wonderful memories!

Chell, it sounds yummier than your tasty treat you blogged about a while back...I'm still recovering from that...I'm NOT from down south...never heard of THOSE! My kids were mortified! :) Funny!

What a sweet story. I am so glad that you had that wonderful holiday with your Dad before he passed. And let's not forget about the pie....the pie that went down in history for being the best Pecan Pie of all times. That just made my heart swell. Have fun this weekend at the bake sale and good luck!!
