Rhubarb Custard Bars

Sunday evening I made some Rhubarb Custard Bars for a Father's Day treat. We were having a super-special fish fry for Father's Day. (I know - how special is THAT???? Take the Daddy fishing and then have him scale, fillet and then fry dinner???? Well, my man makes the most awesome fish fry! And, he didn't even mind!)
My friend Amy and her daughter Ellie spent the night Sunday and we munched on these delectable bars. These are one of my family's favorites!!!! I clipped the recipe out of a Taste of Home magazine once upon a time years and years ago when we were living in a different home, different town. (Once upon a time, in a land far away...)
Yesterday, when I went to my friend Kris Ann's for a girlfriend coffee time, I brought some leftover bars along...and Naomi - a self-professed rhubarb hater even ate hers! So, I share my recipe here, in the event you have some extra rhubarb on hand. These are very naughty (they have a full cup of heavy whipping cream in them), but very good!

36 Servings  Prep: 25 min. + chilling Bake: 50 min. + chilling


INGREDIENTS:

2 cups all-purpose flour

1/4 cup sugar

1 cup cold butter



FILLING:

2 cups sugar

7 tablespoons all-purpose flour

1 cup heavy whipping cream

3 eggs, beaten

5 cups finely chopped fresh or frozen rhubarb, thawed and drained

TOPPING:

2 packages (3 ounces each) cream cheese, softened

1/2 cup sugar

1/2 teaspoon vanilla extract

1 cup heavy whipping cream, whipped

Directions:

In a bowl, combine the flour and sugar; cut in butter until the mixture resembles coarse crumbs. Press into a greased 13-in. x 9-in. baking pan. Bake at 350° for 10 minutes.

Meanwhile, for filling, combine sugar and flour in a bowl. Whisk in cream and eggs. Stir in the rhubarb. Pour over crust. Bake at 350° for 40-45 minutes or until custard is set. Cool.

For topping, beat cream cheese, sugar and vanilla until smooth; fold in whipped cream. Spread over top. Cover and chill. Cut into bars. Store in the refrigerator. Yield: 3 dozen.

OK... confession... I have not made it to the post office yet... HORRIBLE!! ugh! It is on my MUST DO for Monday... School is now out... and Life has officially slowed down as of today.. =) yikes! summer is filling up fast.. and it stresses me out! I just want to lye around the pool... Oh wait... I don't have a pool... or pool weather! =)
