Gearin' Up...

The kids are out the door...

Everyone woke up, bright and early - with smiles on! Mission accomplished! And, I walked Angel (the deal is, during summer vacation Bridgette walks the dog first thing in the morning and on school days I do it - however, on weekends, she is back to dog-walking duty). Then, while the kids were showering (it was SO NICE having that extra shower downstairs this year!), I set out to make English Muffin/Egg/Canadian Bacon/Cheese Sandwiches for the kids. Last night they had their backpacks packed, and lunches made. If only the whole school year would go this smoothly... But, I did enjoy today. Everyone was full of hope and excitement.

And now?

I miss them already. I know, I'm a sorry excuse for a mom of teenagers. But, now I'm off to my busy day. I've a day of preparing and writing. I have a bunch of editing corrections I need to apply to a study I've written.

But, first - I need to make about 15 more of those Egg McMuffin-type sandwiches and freeze them. Did you know you could do that? All you need to do is put them on your electric griddle and fry them up en masse. I went to our local Hallmark Store and bought some cute silicon egg rings to make my job easier.
This ring lays right on the griddle. I whisk up the eggs and pour them in. When they are almost done all the way through, I can lift the ring off and flip the egg to finish cooking all the way and slip a piece of cheese and Canadian bacon on top. I toast the English muffins in the toaster...and Wallah! An Egg McMuffin-type Sandwich is born! I flash-freeze them on a cookie sheet. Once they are frozen solid, I put them in individual baggies. The kids take them out, as needed, and wrap them in a DAMP paper towel and microwave on high for 2 minutes. The English muffin stays toasty - never chewy and the egg stays fluffy. It's a great way for older kids who make their own breakfast to have a nutritious hot breakfast.
My friend Trina has a good recipe for a similar thing with turkey and egg baked in muffin tins. She said she'd give me the recipe. Once she does, I'll try it and maybe I'll post that for you. I'm always looking for good, filling hot breakfasts for the kids (now that cereal doesn't last Aaron "past second hour").
I think that maybe next week, if I feel ambitious, I will haul out the griddle again and make a bunch of pancakes and freeze them. That boy can eat about 6 at a time, though...
I wish my kids liked oatmeal, but they really don't.

Yahooooooooooooo Another Wisconsin blogger. I have a hard time finding many bloggers from here. I live in Medford and have my whole life. I grew up here on a dairy farm and my husband and I bought 100 acres from my Dad when he retired. I love it here.

I make those Egg Mcmuffins too....

I have made pancakes and froze them, but I have never made egg muffins. I will have to give it a try.

The waking up early works the first week of school here, but nobody wants to get up the next week!

I am going home to do this today!! My kids will be super excited. Well. Maybe not. I will be super excited and they will look at me like I have gone mad.

mmmm...those egg mcmuffins Pennie style sound great! I think I have the same recipe that your friend has. We usually make them for special occasions.
My kids love pancakes. I usually make a whole bunch of blueberry pancakes and then freeze them too! However, when I have 3 teenage boys, and they are eating 6 at a time, I don't think I'll be able to keep up.
I'm glad your first day of school went well. Sounds like you are keeping pretty busy while the kids are at school. I get asked all the time if I'll go back to work when all 3 boys are in school. HA, Believe me, I can keep myself busy enough!
