That's because she saw me kneading dough a few hours earlier, and as she was on her way out the door, she heard me ask Mike to preheat the grill. She knew right away I was making this:
Yep, those are pizzas on our grill....pepperoni pizzas! They are SO GOOD!!! My friend Amy (the one who owns & operates a cooking school and catering business) gave me this recipe at least ten years ago. It is a special summer treat. It's a family favorite. And, it's kind of fun to make!!! I'll share the "secret recipe" with you...you have to try it! Your family will be awed by the taste, and the uniqueness of these little buggers.
GRILLED PIZZAS
1 packet yeast
1 cup warm water
1 teaspoon salt
3 cups flour
1 Tablespoon olive oil
Shredded Mozzerella and other desired pizza toppings

1. Mix yeast and water in a warm bowl and stir until yeast dissolves. Mix in one cup of the flour and the oil. Mix until smooth. Add salt and second cup of flour. Mix again until smooth.
2. Turn onto a floured board and knead into ennough of remaining flour to become elastic. Knead about 10 minutes. Let rise until doubled, about 1 hour. Punch down. Let rise again.
3. Take a small piece of dough (about 2-1/2" in diameter) and shape into personal pan pizza size. Place on pan brushed with olive oil. Brush both sides of crust with thin layer of oil. Continue with remaining dough.
4. Heat grill to medium-low. While preheating, get all of your toppings ready on a tray and place near grill, so you can top the pizzas while they are on the grill. Make sure everything is easy to get to.
5. Place dough on grill until browned on one side (3-5 min.). Flip and top as desired (quickly!). Close lid to melt cheese, about 5 minutes.
Your family will LOVE these pizzas! You can experiment with different toppings. My family is pretty plain...they don't like anything fancy...but if I were cooking for my extended family...I could get really fancy!!! That would be FUN!

Those look yummy. I've never tried pizza on the grill but I hear it's yummy. I must give it a whirl!
Someone else mentioned that they did grilled pizza and I was wondering how they did it without it sticking to the grill bars... AHA! Brush it with oil! Thanks for the recipe! I am so going to try this.

and can you believe ... I am pretty much the only one who even LIKES pizza in my house... *wrong* so wrong* =) I might do this one day... and cheat!!
